How to cook whole lentils

1 cup of dry lentils makes approximately 2½ cups of cooked lentils.

1 cup lentils
4 cups water

Bring lentils to the boil in saucepan. Simmer for 40 mins. Place lentils into
collander to drain and rinse thoroughly with running cold water until water runs clear underneath.

TIP: Rinse cooked whole lentils to eleviate flatulance. Pre-soaking can also reduce the cooking time (ie. soak overnight and you only need to simmer lentils for 20 minutes at cooking time).

How to cook farro (pearl spelt)

1 cup farro (pearl spelt)
4 cups water

Bring to boil and simmer for 18 minutes. Drain and serve.

TIP: Cooked pearl spelt or pearl barley is great as a bed for lamb chops or roast beef. Use liquid stock for more flavour.
